Abstract:

Vacuum Skin Packaging (VSP) has emerged as a very promising alternative for packaging fresh protein foods (Ej. meat and fish). Here, an in-depth review of the most important developments for VSP are described, with special focus on the advantages that the use of PET and rPET trays has for this novel packaging system.
